Green Curry with Chicken (Kaeng Khiao Wan Recipe)

Green Curry – Kaeng Khiew Whan – Phuket Cooking Class
Ingredients
For 3 – 5 People
- Sliced chicken 30 g.
- Coriander seed 1 Tablespoon
- Thai eggplant 30 gr.
- Cumin seed 1 Teaspoon.
- Turkey berry 10 gr.
- Pepper 10 gr.
- Basil Leaf 10 gr.
- Galanga 10 gr
- Coconut palm sugar
- Lemon Grass cut 1 tablespoon
- Garlic
- Kaffir lime ( Green skin )
- Finger chili gr.
- Shallot 10 gr
- Salt ½
- Shrimp Past 1 Teaspoon .
- Coconut milk 300 g.
- Fish sauce 2 Tablespoon.
- Green Chili 50 g.
- Vegetable Oil 2 Tablespoon.
How to do Green Curry
- Roasted spice (coriander seed, galangal, lemon grass, shallot, garlic, cumin seed, kaffir lime skin with low fire on the pan and then put them to blender and mix all together. Then, put shrimp, salt half teaspoon before finish blender. Mix everything together and proceed to the next step.
- Put vegetable oil 1 ½ tablespoon, add green curry past, add coconut milk 50 gr. and stir well, add sliced chicken.
- Put boil water 500 ml. Add Thai eggplant cut, turkey berry, boil 5 min, Add finger chili red and green cut, add fish sauce 1-2 tablespoon, add coconut palm sugar 1 ½ teaspoon, salt half teaspoon and then close fire the last put basil leaves .
- Ready To Serve.
